Spaghetti Tahdig
with a spiced bolognese-style sauce
Today I’m cooking one of my favorite meals. It’s basically the Persian version of spaghetti bolognese that’s turned into a crispy tahdig called '“makaroni.”
This is a fun way to change up your tahdig (crispy bottom of the pot) game, by replacing the classic rice version with pasta. It is equally as show stopping and satisfying. For the pasta I love to use either bucatini or spaghetti and it is cooked with a spiced tomato based meat sauce.
You can serve makaroni as the centerpiece of a weeknight meal or as part of a larger menu for Shabbat. I think it works best with a freshly chopped herb salad and for the weekend you can also serve it with a simple roast chicken.
This is a recipe loved by both the kids and adults at the table.
