Today I’m sharing a recipe for phyllo turkey pot pie. It has a deeply savory turkey filling that’s enveloped with a rustic crust made of phyllo dough. It’s a great way to use up any leftover turkey this week. I mix shredded turkey with leeks, parsley, and peas to create the filling. And the crust is made of sheets of phyllo dough that I scrunch up into bundles that bake into a crispy golden crust.
