In the summertime I love to cook Persian tomato rice. It’s basmati rice that is steamed with layers of savory tomato sauce. You can prepare it on its own or with vegetables like string beans or in this case charred eggplants.

This is a great way to change up your rice game. The tomato rice can be the centerpiece of a weeknight dinner or you can serve it alongside freshly grilled chicken or steak and a bright summer salad to round out the meal.
