If you know me you know that I love to experiment in the kitchen, especially when it comes to schnitzel. Today I’m sharing a recipe for kataifi schnitzel — I use kataifi dough (shredded phyllo) instead of breadcrumbs and it takes the schnitzel to another level. The thin strands of dough create an incredibly flakey and crispy crust that’s also delicate and melts in your mouth. Once the schnitzel is fried and beautifully golden I finish it with flakey salt and crushed pistachios for some more flavor.
