A holiday menu with everything "stuffed"
including a a new way to stuff eggplants and a leek and chicken phyllo pie
We are well into the Jewish high holidays and today I’m sharing recipes that are great for the holiday of Sukkot which is right around the corner. The theme for today’s menu is that all the dishes will have an element that is stuffed (fun!).

LEEK & CHICKEN PHYLLO PIE
EGGPLANT PIE STUFFED WITH BEEF, HERBS, & PINE NUTS
HONEYNUT SQUASH WITH FRIZZLED SHALLOTS, SAGE, & HAZELNUTS
TACHIN (PERSIAN RICE CASSEROLE) WITH SPINACH & ONIONS
BUTTER LETTUCE CUPS WITH CUCUMBERS, FENNEL, & OLIVES
Some highlights are a leek and chicken phyllo pie that’s basically my amped up version of a chicken pot pie. There’s also a stuffed eggplant pie filled with beef, scallions, and herbs (this one is a crowd favorite). And if you’re looking for a festive vegetarian (and gluten-free!) dish there’s roasted honeynut squash that’s “stuffed” with frizzled onions, sage, and hazelnuts. These recipes serve about 8-10 people.
